Tran Tuan Ngai is a third generation Chinese-Vietnamese in Hoi An. Ngai's grandfather was the one who first created the light and fluffy dumplings for family dinners. The dumplings are served topped with crunchy bits of toasty garlic and served with a sweet dipping sauce.
By the time, the dish had been widely introduced in the region, Tran Tuan Ngai opened a restaurant named White rose so more people would know about it. Many people like these cakes not only for their delicious flavor but also for their beautiful appearance. The French gave it the name "white rose".
White Rose dumplings are a specialty of Hoi An and they can't be found anywhere else. It's one of those dishes that has made Hoi An cuisine become so unique.
